Il Molino farm, which has belonged to my family for generations, is built around the 17th century farmhouse that represents the heart of the property.
Located on the hills of the charming upper Lazio region, between Viterbo and Bolsena Lake, it spans approximately 300 hectares.
Respect for the environment is a top priority for us and our products are 100% organic.
Heritage grains such as hard wheat “Senatore Cappelli”, are grown here but it is the olive grove and its centuries old Canino and Frantoio tree varieties that represent the core of the activity and the pride of the farm’s production.
The farm harvests the olive fruit when the olives start getting dark; this is crucial for the production of a light, slightly fruity – low acidity flavoured oil.
The olives are picked and pressed, within the span of 3-4-hours in the farm’s press; the end result is a product full of chlorophyll, polyphenol and tocopherol, which help the anti-oxidant process and represent a precious source of vitamins.
The farm’s press, equipped with an innovative cold working system, allows the extraction of oil at a very low peripheral velocity in order to maintain unaltered all organic qualities and beneficial substances of the product.
The extra virgin olive oil is filtered and kept in containers under nitrogen to avoid the oxidation.
