The olives are harvested while still semi-green, which guarantees oil with low acidity, which is light with a fruity flavour.

It has a yellowish-green colour and the perfume has a hint of aromatics herbs, of thistle and dried fruit. The flavour is balanced.

From an initially sweet taste it takes on the slightly bitter taste of thistle then ends with an aftertaste of white pepper.
